How to make Ghanaian Kyinkyinga

This must be one of the most common street foods around Ghana and i am sure everyone has had some. Even the thought of it makes me hungry.

Kyinkyinga (Pronounced chinchinga) is Ghanaian version of Kebab. It can be made with beef, chicken or pretty much what every meat u like as long as its boneless haha

Kyinkyinga is sometimes made in different ways, but i’ve discovered that this is the most easiest way and adding your home made suya spice makes it even better!

To make Kyinkyinga you will need:

  • 2 tbsp olive oil
  • Boneless chicken or meat
  • 2 fat cloves of garlic
  • 2 tbsp grated ginger
  • 1 small onion
  • 1 chicken stock cube
  • 1Maggie cube (optional)
  • 1 large red bell pepper cut in cubes
  • 1 large green pepper cut in cubes
  • 1 large red onion cut in cubes

Suya Spice

  • ½ cup grounded roasted peanuts (milled into powder with excess oil taken out so that it is very dry)
  • ¼ cup each chili powder
  • ¼ cup roasted paprika powder
  • ¼ cup of garlic salt
  • ¼ cup Onion powder
  • ¼ cup dried mixed herbs
  • Salt to taste

1. First of all you will need to Blend your ginger, garlic, onion, stock cube seasoning with the oil to form a smooth paste. Now set this aside.

2. Now cut your chicken or meat into chunks and Add the paste all over the meat or chicken and marinate for about an hour.

3. Skewer the seasoned chicken pieces alternating with the peppers and onions and set aside.

4. Mix all the ingredients for the suya seasoning into a large bowl.

5. Once the suya seasoning is ready, sprinkle some of it on the skewered chicken/meat and grill till it is cooked and browned both sides.

6. Remove from the heat and sprinkle a bit more of the suya powder on it and serve.
